Food costings and hitting GP
This is something in which I feel a lot of modern day head chefs' either lack the knowledge of, or struggle with.
In my time as head chef and executive chef, I have reached and maintained GP targets in every venue. Ranging from 70-76%.
I can offer help with actual food and menu costings or perhaps just offer some extra 1-1 training with your senior chefs' to give them the confidence to cost their own menus.
Using the correct suppliers
Having so much experience in the industry and having used many different suppliers both local and national throughout the years, I know how important it is to have the correct suppliers for your business. I can help you with your suppliers or potentially put you in touch with others I feel might suit your needs better.
(Just to note I do not have a link with any suppliers so I don't get any kickbacks from suggesting suppliers, I literally suggest the best possible fit for you and your business).
Menu writing and planning
From high end accoladed menus to wedding catering, Dan can help with menu writing and planning. Seasonality, cost effective, local produce all come to mind when writing menus. If you need help breaking routine get in touch.
Dish development
If you don't quite need a full menu written, but still require some inspiration Dan can help you with individual dishes, these can be created tailored to your needs and requirements and can be tried and tested in your establishment.
Food styling and Photography
When it comes to plating up a dish Dan is no stranger to creativity, Having competed in some of the country's most prestigious competitions he certainly has an eye for detail.
Although Dan doesn't have any formal training in food photography, it is a hobby and a passion.
